For example, à la carte : marbled duck foie gras marinated in mulled wine and quince compote, haddock marrow and Pack Choy in haddock broth, perfect egg on Jerusalem artichoke coulis, quasi veal cooked at low temperature on speculoos and carrot coulis, pork cheeks braised with Christmas beer and potato crisp, assortment of cheeses matured by Maison Tourette, spiced poached apple on shortbread and caramel, iced nougat and milk chocolate, Black Forest revisited...
