The evenings of summer 2024 are set to be memorable at the Hôtel Métropole Monte-Carlo, with the return of the long-awaited culinary pop-ups at Odyssey. This year, Chef Christophe Cussac has called on a talented duo to surprise guests' palates: Manon Santini and Rocco Seminara. Together, they bring a new dimension to Italian cuisine with their ZIA concept, which will enliven the poolside restaurant from June 12 to August 31, from Wednesday to Sunday for dinner.

The magic of pizza dough

The essence of ZIA lies in Manon and Rocco's desire to fuse tradition and modernity. Their culinary approach respects the deep roots of Italian cuisine while exploring new avenues for rediscovering pizza. The duo offers a menu where each pizza is a work of art, crafted with premium ingredients and modern cooking techniques.

The secret of their creations lies in the dough, a key element that sets their pizzas apart. Using high-quality Italian flours such as T00, integral and selected cereal flours, the dough is carefully kneaded and rested for 48 to 72 hours to develop the perfect texture. This process results in a light, crispy dough, ready for a variety of creative fillings.

On the menu, classics are revisited with a touch of originality. You'll find timeless pizzas like the Margherita and the Napoletana, as well as more daring creations like the truffle pizza or the avocado caviar pizza. Each bite is an exploration of Italian flavors, enhanced by meticulous, innovative presentation.

Innovation doesn't stop with savoury pizzas. Manon Santini, crowned "World Champion Pizza Dessert" in 2019, offers sweet pizzas that will awaken your taste buds.
