SHAI SELTZER CHEESE & GOATS
This is no longer a secret for any Israeli: on the edge of a valley, a few kilometres from Jerusalem, the pioneer (since 1980) and best goat cheese maker in the whole country is working! Just look at the 4x4 parade on Saturday afternoons to understand that Sabbath is not a day of rest for the biquettes! Let's be clear, Shai is a bear who wears on his chiselled complexion the marks of a well-soaked character... in the milk of his sheep with which he works wonders. A small sales and tasting bar has been set up in an open cave where you can taste the different types of cheeses made. Accompanied by jam, dried tomatoes, fresh bread or wine, the palate plays absolutely Dionysian associations. All made from curdled milk, the maturing techniques will give each one a particular aroma that the maturation period will affirm. It's hard to leave the empty basket again! Not so much a bear, Shai organizes, in addition to tastings, workshops to make goat cheese; it even welcomes woofers who seem to have trouble leaving the place....
