Konstantinos Toumazos created this 100% organic cheese factory in 1994 on Chios Island north of the northern ridge and a few encâblures of Turkey. Every day, she develops cow's milk and organic goat milk from very popular traditional cheeses, which are found on the island but also in selected shops in Athens.
