Nico Romito is a self-taught chef who has quickly risen to the top, winning three Michelin stars. Three watchwords: simplicity, authenticity, balance. This simplicity is nevertheless very complex in its elaboration: (very) slow cooking, sous-vide, research into textures, rare products... The result is unequivocal: a festival of flavors! But if you're looking for the classic Italian restaurant, you'd better go elsewhere. The tomato consommé is a pure marvel, and the lemon water served at the end of the meal is a delight.
