The Petit Futé Var team recently met with chef Christophe Jourdren, current President of the Delegation of the French Association of Master Restorers of the Var and member of the Culinary College of France and Euro-toques. After the visit of the beautiful guest house Villa Louancelie in Cavalaire-sur-Mer, which he owns, he goes to the gastronomic restaurant l'Épicurien in La Croix-Valmer. A few minutes separate Christophe's two beautiful addresses. The exchange around gastronomy was punctuated by a generous and masterful dinner in the chic and refined setting of the Epicurean. As a starter a trip to the Mediterranean with 7 courses with panisse fries, roasted green asparagus with parmesan shavings, gratinated polenta and truffles, zucchini soufflé, Serrano ham matured 36 months, cold lentils, rocket salad and fresh truffles rappées ; an iodized break with scallop risotto in short seafood juice, followed by a duck tournedos stuffed with foie gras and mushrooms; and as a dessert the famous floating island of the house. Everything is gathered to spend a good night at the Villa Louancelie.
