The feast day dedicated to Agios Georgios, i.e. Saint George, the patron saint of the country and of shepherds, falls in Greece on April 23 or on the first Tuesday after Easter. To celebrate him (and to join in the celebrations), it is often enough to look out for the many monasteries that bear his name. Thus, in Pano Koufonissi, in the Lesser Cyclades, a procession takes place on the beach, followed at sea by the caiques. The old custom according to which an inhabitant of the island, drawn by lot, offers a meal to all, is no longer followed. But we sit down to a good meal and dance!
