With its crunchy and soft texture, the wheat to cook delights children and adults alike. It can be served endlessly: as a starter with a Creole avocado, as a Mexican pan, or as a dessert with a lemon zest. The entire Ebly range is certified as Origine France Garantie.
History. Since ancient times, durum wheat has been a staple food. Requiring slow cooking, it is reduced to mix with pasta, agglomerated into semolina or bulgur. In 1995, in the heart of Beauce, the Beauce agricultural cooperative Le Dunois, in partnership with INRA, developed a new pre-cooking process to obtain Ebly wheat for cooking. Cooking time is then about 15 minutes, then reduced to 10-12 minutes.
A small grain is obtained halfway between pasta and rice, with comparable nutritional qualities. Ebly is a success in France, then throughout Europe.
The products. To obtain wheat to cook, the wheat grains are first mechanically sorted, then steamed to retain all their nutritional qualities. They are then shelled, dried and cooled, before being packaged.
In addition to the pre-cooked Original wheat, Ebly produces Express wheat with an al dente texture and wheat with more fibre.
Employment. The Marboué site is very dynamic and is the only one to produce Ebly wheat following the atypical union between the American agri-food group Mars and farmers from Beauce. The plant currently employs 130 people, with 22 additional hires since January 2019.
