Back to his roots, young Castelroussin chef Adam Blondeau has pulled out all the stops. Just a stone's throw from the Hôtel de Ville, the gray facade features just one thing: a leafy logo in effigy of his favorite ingredient, plants. The décor is uncluttered, with stone and wood, neutral materials that clash like the rope-like design of contemporary furniture. A well-mastered score awaits us in two possible movements (discovery or signature). With its single-product plates, taste and masterful cooking, it's easy to get excited!

Open all year round. Thursdays from 7:15pm (last service at 8:30pm); Fridays to Sundays from 12:15pm (last service at 1:30pm) and from 7:15pm (last service at 8:30pm). Menus from €38 to €68 (wine pairings (3 glasses) at €19). Wine by the glass.
