Since April 2024, Philippe Niçaise has taken over the successful cheese dairy of Marie-Thérèse and Thierry Cartereau. He selects farmhouse products that reveal the terroirs of the whole of France (95% of the selection is made from AOC PDO farmhouse raw milk), as well as a few Swiss, Italian and English specimens. A fine collection of cheeses made from cow's, goat's or ewe's milk. It offers seasonal cheeses to delight lovers of exceptional cheeses. To diversify a little, you'll also find some farm products (wine, jams...). A warm welcome!

Opening time and information on LA MONTAGNE AUX FROMAGES
Open Tuesday through Thursday from 7:00 am to 1:30 pm and from 3:00 pm to 7:30 pm; Friday and Saturday from 7:30 am to 7:30 pm; Sunday and holidays from 8:00 am to 12:30 pm. Open on Sunday (morning). Member of the Collège Culinaire de France.
Owner's Message
Behind this display of farmhouse cheeses as numerous as their sign: "we want to thank our customers for their trust, which allows us to continue to present prepared products refined by our care". Because the cheeses they propose have their particularity: when they are not AOC or AOP, they come from the bottom of the soil. The path is not always clear for the ripeners, who are constantly on the lookout for small, unknown producers. They pay an obvious attention; a particular passion to the goats, to the ewes, that you will discover, a gold mine of farm cheeses of the whole France. Trust them, they will advise you, let them direct you, and you will taste exceptional cheeses, selected and matured by them.
Cheeses in celebration
For the holidays, a homemade preparation of Brie de Meaux with truffles (melanosporum) will be offered, as well as other products made with black Italian truffles (10% of the total weight), special cheeses such as the farmhouse parmesan of the Red Cow (Vacche Rosse), Swiss and English farmhouse specialties (cheddar, stilton, cheshire)...Place your order, and the straw that will decorate your tray for Christmas will be offered. All you have to do is find dried fruits and grapes to dress it all up. And if you have a large gathering, La Montagne aux Fromages can organize a buffet for your event (individuals and companies).

The Balzacian
Gourmet tart with Sainte Maure de Touraine
Ambassador of Sainte-Maure cheese in 1842 in his novel La Rabouilleuse, in this year Balzac and to pay tribute to the writer born in Tours in May 1799, two friends artisans from Touraine ,
thierry Cartereau, a cheese maker, and Joël Legendre, a baker, have created an original tart with roasted dried fruits (hazelnut, almond, walnut, pistachio), slices of Sainte-Maure de Touraine PDO,
on a fine flavor of citrus marmalade and some gourmet secrets...
A second recipe exists with rillons de Touraine and the citrus marmalade is replaced by a quince jelly! In the purest tradition of "travel pies", a new specialty from Touraine is born: La Balzacienne!
Available in 6 or 8 parts, the fresh version of La Balzacienne can be kept for a few days like a home-made pie, and can be eaten cold or warm, as an aperitif, with a green salad, on a walk, fishing, hunting, it's up to you!
It is also available in a vacuum-packed version for a 20/30 day conservation, so you can take it with you in your luggage to enjoy a slice of Touraine later or offer it to friends!
