Maison Martin Pouret is the last to uphold the tradition of making vinegar the old-fashioned way, using the Orléans process. But where does this tradition of Orléans vinegar come from? A simple explanation is that sometimes, if not often, barrels of wine coming up from the estuary arrived in bad condition, the wine had gone sour. Then one day someone discovered that this could make what became vinegar. We had to think about it, didn't we? Since 1797, Maison Pouret has had the time to develop a passion for a product with many virtues and possible uses. J'ai testé le vinaigre vieux :parfumé et sans acidité. Et le vinaigre de framboise, celui au thym, au vin blanc, de cidre, balsamique, Tous ont un goût particulier qui enrichit les plats et les salades, selon sa préférence.
J'ai un faible aussi pour le confit de moutardes.
I advise you not to use the vinegar with old for the creation of your gherkin preserves. Indeed the too loud vinegar cooks them and thus are inedible.
