BENOIT GOUCHAULT
This is the famous cotignac d'Orléans, a speciality born in antiquity. A favourite confection of Francis I, it was the gift made by the kings of France to their guests. This confectionery is a delicate soft and melting dough with quince juice, very refined in its small round spruce box which mixes the two flavours. To taste this sweetness, the most greedy will plunge their tongue into it, and for the others, break a small piece of the box to make a small spoon... Benoît Gouchault would be the only one to have the recipe...
