L’ESCARGOT CHAMPENOIS (THIERRY LETISSIER)
From a much finer flesh than the so-called "Burgundy species", the snails raised by Thierry Letissier come from a species originating in Algeria. These are shell snails, of the same size as "Burgundy", prepared and packed in jars. Mr Letissier produces about 500 000 "Big Grey" for the vast majority of marketing, by sales to individuals directly at the place of production, but also to local conservators. They are dedicated to reproduction. They are high in park and in a heated greenhouses as soon as the cold point is on the horizon.
