The Carroy bakery, in addition to its traditional breads, pastries, desserts and chocolates, is the unique place where the "caisses de Bar", a typical and historic biscuit of Bar-sur-Aube, is made: a small meringue with slivered almonds that goes marvellously with a glass of champagne. Éric Carroy masters the recipe to perfection.
