The Auberge du Cygne de la Croix deserved a new clientele, made with the many visitors to the Camille Claudel Museum, just 150 meters from the restaurant. As such, tributes are appreciated through menu titles: Claudel, Alfred Boucher, Flaubert… Here, we pay tribute to the region and its products: chaource pie, rostrum rostrum… The house offers traditional cuisine. You can also ask for meal platters because the hotel offers catering services.

For long weekend May 15th, we had decided, my partner, visit provins. As we had been taken at the last time, most hotels provins were full. We therefore decided to fall back us to a small hotel Nogent on the Seine, a small town located about twenty miles of provins. There after a long day with provins, some to arrive at the hotel around 19:00, and too tired to go back to dine, we finally reserved a table in the Auberge du Cygne de la Croix, located just a stone's throw of our hotel.
The decor of the restaurant, first of all, is both elegant and welcoming, even if the volume of the music would have won a little higher, and if the light could have been more subdued, with some lamps or candles on the tables for more romanticism. But these are the only drawback we can issue.
We ordered two " menus terroir" a €27.90. And it is here that a gourmet experience started that we can not forget. In addition to the pleasure of the eyes, it is the taste of each sun-drenched we enjoyed who completely transcended us. The word that generally came to us to describe the cuisine that we had the opportunity to enjoy is " divin" Not " it is bon" or even " it is délicieux" and " it is divin". Between grilled slice of bread the Troyes sausage coq in Marc de Champagne, and the frozen chocolate steak, pleasure was total. Resident in Paris, however, we were lucky enough to catch many good restaurants, even tables prestige, but I can assure you that our evening in Auberge du Cygne de la Croix was fabulous surprise that we do not expect absolutely. During dinner, we wondered how it was possible to combine in a way also harmonious textures, cooking and seasoning. If I had to give a touch to the cuisine which was offered to us, for the first time of my life, I would give you 20/20. Le Chef is even parvenu to make a broccoli, vegetable that I loathe, delicious and tasty " bonbon" I could delight me daily if that was allowed me!
I must absolutely underline the taste of sauces. We did not think that a sauce could also good. It is only later, by visiting the site of the restaurant, which I learned that the Chef Master Sauce-maker... I have better why we enjoy ourselves as much... For those who do not know what is a real sauce, I invite you to try the experience!
The wine, we hesitated between two red wines £22, and the Chef run us to the size of Roussillon Gérard Bertrand 1998. For once a REAL wine, for a relatively modest price for a restaurant, is offered to us, we can say on this floor also surprise, we really and were discovered a wine local that we do not know. A real " grand" wine, old as it should be, for a total pleasure, and whose association with dishes that we enjoyed was perfect!
Finally, I must say a word of the waitress and the Chef, who regularly went to our table. They have managed to make us at ease know to be discreet yet friendly and warm. The impression that we had is that they loved their trade. Le Chef even gave us feel real enthusiasts, in addition to being a wonderful expert and chef. Usually in most restaurants (even the large), we feel in our access the indifference or eagerness. The atmosphere of our dinner in love with this month May 2012 was very different! A moment of relaxation and happiness!
Returning our stay, as I indicated it previously, I went to visit the site of Auberge du Cygne de la Croix, to know that were offered one evening so memorable us. It is by discovering the wines of the Chef, Gabriel Marlot, which I included: it is a Master Sauce-maker who worked with starry chefs and especially in Plaza Athénée. For wine, I also had the explanation: the hotel has a real cellar housed in an old underground Nogent.
We had the possibility for a price reasonable, discover the cuisine of a Chef who had all the skills to open a restaurant with exorbitant prices. For me, this restaurant is the perfect restaurant that any chef should dream to have. If you want to enjoy authentic cuisine and tasty, my advice closed: sink!
