Restaurant offering copious, refined dishes with choice products
The plates are copious, well sauced, but refined with choice products! The former Toque Baralbine has set down his plates in the city of Troyes. The calf's head in carpaccio will make more than one refuse to try this dish, andouillette of course, but also foie gras, squab... Often accompanied by a lightly alcoholic sauce: ratafia, champagne, coteaux-champenois juice. We're in a place that's more gastronomic, despite the lightness of its name.
