Restaurant offering copious, refined dishes with choice products

The plates are copious, well sauced, but refined with choice products! The former Toque Baralbine has set down his plates in the city of Troyes. The calf's head in carpaccio will make more than one refuse to try this dish, andouillette of course, but also foie gras, squab... Often accompanied by a lightly alcoholic sauce: ratafia, champagne, coteaux-champenois juice. We're in a place that's more gastronomic, despite the lightness of its name. A tour of the kitchen, just looking at the unworked products, convinces us. The price matches the service...

Ce nouveau restaurant dans les rues troyennes est très bien. Les plats préparés par le chef sont très bons. Un peu cher dans l'ensemble... Les vins au verre ou à la bouteille sont également un peu cher par rapport à d'autres restaurants qui proposent la même carte... mais je recommande toute de même, nous avons passé un bon moment.
