A fine map of wines and champagnes, apple juice, Aube beers, that of the Moulin Saint-Pierre and organic. The pick of oyster oyster, Maizières biscuits, homemade gras, or snails. Red and Black modernize tradition. Attention is commendable, but perhaps more suited to tourists than to locals.
