If you want to bring back Troyes' well-known specialty, andouillette, this is the place to go. Elected by the Commanderie des Fins Goustiers of the Duchy of Alençon - yes, Madame! -Patrick Maury is the master of charcuterie. On the one hand, he makes andouillette by hand, as lightly as possible, and on the other, head, snout and terrines. You can't make out the narrow, quickly-filled store, but once you've crossed the threshold, it's hard to choose. The smells tease your nose, and the welcome is as warm as the products.
