HÔTEL DU CHEVAL BLANC * * *
Anchored in the heart of the fortified city of Langres, this hotel-restaurant is established in an ancient priory of the twelfth century, the church Saint-Amâtre, which was transformed into a hostel during the Revolution. The noble and chic building meets the Châteaux and Demeures label of tradition. The entrance of the rooms plunges you into an atypical world and brings an incredible stamp to the place, especially since the furniture is modern and chic. Each of the rooms reveals a special setting with personal charm with beautiful drapes and white stone walls. The Diderot Pavilion offers standard, simpler, but very comfortable rooms. In the restaurant, the chef works very fine products with precision, care and creativity. Two menus, land and sea, are offered and well controlled.

The raw salmon entrance (not smoked) is repugnant, still frozen fourées tomatoes are covered with grass. The entrance of the children's menu is same fibre.
The vegetables are unnamable, leek is all and raw in the plate!
Dessert is served on a slate which grates and unpleasant, without taste.
Perhaps foreign tourists is do some but not me.
