This cheese dairy is one of the main producers in the region. Cow's milk cheese is in the spotlight: from classic langres to langres champenois, matured with champagne marc, through bassignot (a fresh cheese) or Mirabella, matured with Mirabelle plum brandy, or even Saulxure blanc, Carré de l'Est or matured Saulxurois. Since 1950, they have been working to perpetuate the tradition and their Langres has won many prizes: it is moulded by hand with a ladle in the purest tradition and in an ancestral way.
