I had the pleasure of staying at Champagne Collery and it was truly memorable. Nestled in the heart of the Champagne region in Ay, this hotel offers elegance, attention to detail, and a peaceful retreat as well as exceptional Champagne. The luxurious accommodations and attentive staff made my stay unforgettable. Highly recommended for an extraordinary experience in Champagne!
We had booked 2 rooms in the "Collery" on our Bentley car Rallye.
The lowest Rating of 5 hotels during 1 week in England and France.
An outwardly nice house, a bit hidden in Ay, but unfortunately a miserable "one girl" service.
At check-in at around 7.30 p.m. (for which we were immediately charged additional fees) we were also required to pay in advance and an additional deposit per room.
Do thieves or hooligans spend the night here more often?
As frequent travellers, we have never experienced an additional separate security deposit per room, not even in luxury hotels such as the Ritz, Byblos or Hotel de Paris.
The girl at reception - by the way the only person in the hotel - also seemed a bit overwhelmed. Probably a waitress or temporary help, at least with no experience in the hotel industry. Behavior varied from awkward to intrusive.
We would have liked to try the house champagne upon arrival. It was then told, only succinctly, there was a bottle in the room … as if this bottle was offered by the house. There was a bottle in the room, but it was more expensive and to be charged as well.
In arrival at a champagne house - supposedly from 1893 - you might even expect a free glass of champagne as a welcome. At least that's how we know it...
The hotel also kindly booked us a restaurant. Caution: 50% of the restaurants around Epernay are now closed on Mondays and Tuesdays. The recommendation turned out to be a "pizzeria"! We recognized this and were able to rearrange. Pizza in Champagne…?!
The rooms are clean and stylish. However, one feels uncomfortable here, rather in a museum or in prison. Like a guest unwelcome.
There are at least 3 prohibition signs in the room. Photos on request. For example: warning to towel thieves, regulations on the use of make-up remover, regulations on the use of the curtains.
Incidentally, milk, laundry soap and shoehorns were missing in our rooms. Hopefully no one stole this before us...
After we had to pay a deposit before handing over the room key, we would have liked to have received confirmation when we left next morning at 9.30 a.m. (one night!) that we had neither rioted nor stolen and left the room as we found it the arrival 14 hours before.
However, this could only be obtained after a "room walkthrough" together with the staff.
It should only be mentioned by the way, that we lost our desire for a champagne from the house of Collery very early on.
Thank God there are enough TOP champagne houses in the 16 Grand Cru communities outside of Ay. These even at better prices and - in contrast to Collery - the friendliest reception by the hosts.
Conclusion:
Clean house with all the rest in enormous contrast to it.
Presumably the establishment or the staff has little experience in the hospitality.
It seems as if the tasting room and the property have only recently been extensively renovated and now "unfortunately" have to rent out rooms to amortize ... !?
In any case, we felt as a disturbing, uninvited guest.
In 40 years "en voyage" we have not experienced anything so strangely unpleasant.

I am sorry you didn't get the Ritz's standards you mentionned being used to during you night at our place. We humbly do not target this level, our sole objective being to provide our guests with a nice, elegant and quiet place to stay in Champagne, helping them booking their restaurants, activities and visits to have a beautiful experience in our region.
As a Champagne House, we have a strong willingness to welcome guests and be able to introduce them to our job, our passion: producing Champagne.
Since you have been very precise, I'll go further and develop the context to your remarques. You did arrive a 20:15 which is 15 minutes after the latest theoric possible check-in time (19:00 standard - 20:00 for late checkin), as mentionned in our Booking.com page and in the message you have received right after booking your stay with us.
Justine volunteered to wait for your arrival instead of cancelling your night with us, which could have legitimately be done with regards to our terms and conditions.
Upon arrival, you shown nothing but disrespect to the staff and despicable remarks, also refusing the credit card imprint (or pre-authorization) applied here as in most hotels, trying to impose your own rules to our staff.
Despite all that, Justine kept doing her best to provide you with services, such as finding you a place in a restaurant. You mentionned yourself being unable to find a place to eat after "12 calls". Again, shall you have taken the time to read the message we systematically send upon booking, you would have seen our offer to help booking in advance a restaurant to your best liking and be aware of the restaurant scene in our area.
Finding a spot for the same evening at 20:30 is almost impossible. It has still been done. The place was an italian restaurant with traditional homemade dishes, not a Michelin Star restaurant but very far for the Junk Food place you try to describe. Since it didn't meet your expectations we used our best relationships to get you a table "Chez Max", highly recognized in the area for the quality of the food.
The next day, you engaged discussion with Soline, our hospitality manager to complain about the terms and conditions. When she started explaining your turned your back and left while she was speaking, not once but twice.
Lastly, I find it interesting you developed an opinion about our champagnes when you refused the welcome glasses you've been offered but still compare it to others.
I wish we could have a discussion about your experience at our place but from your comments, it seems like your expectations and requirements are not compatible with the specific regulations with have to comply with on one hand and the way we run our company on the other hand.
