A veritable institution in sparkling Venice, Maison Souply has been delighting the people of Chalonnais since 1930. It's Fabien Souply who carries on the tradition, revisiting with talent the great classics of French gastronomy. Tête de veau with ravigote sauce, chef's foie gras with chutney of the moment, homemade smoked duck breast salad... all cooked with Guérande salt! While we're in Champagne, we take the opportunity to sample a Menéhildian specialty: crispy pig's trotters and the house signature dish, braised sweetbreads with mushrooms.
