The Gaudinat-Boivin winery, located in Festigny, Champagne, is a must for sparkling wine lovers. Run by two brothers, Hervé and David, descendants of a long line of Champagne winemakers, it has been perpetuating ancestral know-how for three generations. Their 12.5 hectares of vines, cultivated with respect for the environment, produce mainly meunier, the grape variety emblematic of the Marne Valley crus. Cuvées are blended with chardonnay and pinot noir. Authenticity and typicality are the watchwords of this house, which is constantly perfecting its fine bubbles.
