Great food and great champagne! Poulet was wonderful on a cool crisp day.

Hautvillers is a tiny but upscale village and this is a polished and trendy restaurant featuring Champagne tasting and retail sales. We had lunch there and loved it. Beautiful modern design, sharp attentive staff, and a focused menu with fresh and slightly modern interpretations of poulet femier & saucisse aux lentillions. There are various tasting flights that are kind of California in their approach of delivery but which I grudgingly admit work wonderfully. There are three basic grapes commonly used in Champagne and you can taste them in a flight where each glass of wine is one grape only being Chardonnay, then Meunier and then Pinot Noir. Really a fun process. The catch is that a modern high end restaurant, great staff, and quality food has to be paid for so despite being in a small village, the pricing is more big city. These people work hard and deliver. Highly recommend.

The great thing about this place is that this is where we learned about our champagne tastes. The large tasting selection of 6 glasses gave us great insight into what grape we like in champagne. The food is delicious and typically French. A bit on the expensive side though
