It was in 1888 that the estate was created and since the beginnings of Edmond-Alexandre and Laure Vautrin-Gillet, the family know-how has been passed on from generation to generation. Today, Matthias Eun and Thomas Kim Desruets, the 6th generation, have taken over the torch. Since 1888, the old Darcq Flamain oak press, with its 125-year history, has remained at the heart of pressing. The new generation continues to press the grapes the old-fashioned way, perpetuating an ancestral know-how that gives Joseph Desruets champagne all its subtlety and authenticity.
