La Table d'Emeraude is a new top-flight restaurant on the Route des Sanguinaires in Ajaccio, featuring a team already acclaimed by Le Petit Futé for their professionalism and the quality of their dishes: Audrey, Dany and Chef Hervé Honoré. Mediterranean-inspired cuisine, creative and generous, expressing the chef's experience and inventiveness (you won't find Corsican veal melon anywhere else). In an idyllic setting, lulled by the sea air, it's hard to choose between all the tempting proposals, right down to the desserts.
