If there is a tradition that Corsicans do not deviate from, it is the sea urchin dish! Winter is indeed favourable to sea urchin tastings, for which fishing is strictly regulated and only authorised during three months. For a proper sea urchin party, go to a beach with your family or friends to catch these precious seafood (the maximum quantity is 3 dozen per person). Bring gloves to avoid injury. Then, with your feet in the sand, enjoy them with bread and a glass of white wine. Conviviality guaranteed!
