In 2018, Jean-Louis and Jean-Louis Sanguinetti set up a processing laboratory, "Le comptoir de la boutargue". An exceptional product for both taste buds and health, boutargue requires special know-how to get the best out of it. Here, the production process is traditional and authentic, with the necessary drying time for optimum quality. You'll find it in delicatessens and caterers, but fortunately it's also possible to order from our online boutique. Grated or sliced as an aperitif, it's guaranteed to delight!
