SYNDICAT AOP OLIU DI CORSICA
In Corsica, where the cultural practices and the varieties implanted since Antiquity are the heritage of an ancestral civilization based, among other things, on the culture of the olive tree, the olive oil is a product of identity par excellence, resulting in large part from multi-centenary olive trees, never altered by frost, which sometimes reach up to 20 meters high.
Created in 2002, by a handful of passionate harvesters, committed to the preservation of the Corsican olive growing tradition and this unique olive grove, the Oliu di Corsica PDO union works to promote and defend an exceptional olive oil, always produced in small quantities in a rich and preserved environment.
In 2015, the island's olive growers have recognized the specificity of the different flavors obtained according to the mode of harvest, and today, the oil Oliu di Corsica PDO, is available in two ranges: one more "fresh", from the "harvest on the tree. The other one, more "sweet", comes from the "old fashioned harvest", by natural fall on nets, with black olive, dried fruits or flowers of the maquis aromas; it is particularly well suited to hot dishes such as grilled meats and fish...
In order to preserve this exceptional heritage, particularly from the dreaded xylella fastidiosa, which is decimating Italian olive groves, the Oliu di Corsica PDO union, which now has 176 members, has set up a local production of Corsican variety olive plants.
