Xavier Baldovini invites you to visit his artisanal cheese factory which is located in the middle of the maquis on the east coast of the Isle of Beauty. Here are made authentic Corsican cheeses with all the tradition and flavours that this means. Xavier makes the small ewe and the ewe's tomette Fiore di Montaggna, Fleur de Montaggna, the Broccio Passu AOC, the Corsican tomettes, the Corsetin de brebis... Nous avons été très bien reçu, la dégustation des fromages a été précédée d'explications sur le terroir et les techniques utilisées pour sa fabrication, et tous les fromages sont excellents. De plus pour la dégustation des fromages nous avons eu de la coppa et du saucisson, le tout gratuitement. Je vous conseille la visite, vous ne serez pas déçus.
