PATRICE CARQUILLE
A native of Besançon, Patrice Carquille took over the butcher's shop in rue Haag in 2000, which was created after the war, where he worked with Christian Jacquet. Since then, he has focused on animals that come mostly from organic farms in Franche-Comté or neighbouring areas. The beef is organic from the Limousin or Charolais breeds, the milk-fed veal is certified organic, the lamb is organic, from the Coteaux Ugier or from the country, the pork is Label Rouge from La Ferme de Vallegrain, the poultry is organic. This butcher offers many raw butcher's specialities. Also a tractor.
