Jérôme Gauthraye, Maître Restaurateur at l'Aiguillon, offers a culinary experience in which each dish is accompanied by seasonal, mainly organic vegetables. Most of the wild fish comes from the Arcachon fish auction, and the meats come from producers in the Basque country or Landes. A guarantee of freshness and quality, the menu is deliberately short, with a majority of dishes integrated into the menu. The chef has mastered the art of revisiting the great classics of local gastronomy. Les Embruns is a great place to have lunch or dinner with the whole family.
