In 2005 David joined the family farm of 13 ha at the foot of Mont Sainte-Odile. His great-grandfather was a winegrower but also a herbalist and, for God's sake, David cannot lie, he makes his own decoctions of plants for his vines... The estate is AB certified and is currently undergoing biodynamic Demeter conversion. Sulphur is used sparingly and, to limit inputs, the grapes are harvested at maturity. On the south-facing Winkel in Heiligenstein, the estate grows sylvaner, a grape variety generally underestimated in Alsace, but which is nonetheless perfectly suited to it. The aromatic grape varieties come from the Hoell area, a clay-siliceous area. Riesling and Pinot Gris are grown on the Grand Cru Moenchberg terroir. The estate also vinifies other Alsatian grape varieties such as Klevener de Heiligenstein and produces a fine range of Crémant d'Alsace. Every Thursday at 5.30 pm, from June to September, David invites you to discover the vineyard and the cellar followed by a tasting and a light snack. Duration: approximately 2 hours.
