The fort at Les Rousses in the heart of the Haut-Jura nature park has left its military role behind and is now serving the needs of taste. The thick walls and rock faces now offer their qualities to 130,000 wheels of Juraflore comté cheese. The climate is constant and the hygrometry perfect. During the tasting visits, you will discover the art of maturing and the thousand and one flavours of mountain cheeses. Behind an exceptional Comté cheese, there is always the talent of a master cheese maker. He is the one who watches over his wheels of cheese throughout their delicate maturing process. With his probe in hand, he examines his beautiful residents. In order to reveal all their flavours, the Comté cheeses will pass through 5 to 7 cellars. In the heart of this remarkably converted military fort, you can discover the Juraflore Comté maturing cellars and the history of the greatest cheeses of Franche-Comté. When you enter the astonishing Charles Arnaud cellar with its fantastic 214 m long stone half-centre, you will understand how, under the effect of the stone vaults, the work of men and time forge, for each of the cheeses, the best flavours of the Jura Massif. Today, the Fort des Rousses is recognised as a major tourist site and a centre for the promotion of local cheeses from the massif. Arrivée le dimanche et déjà complet pour la semaine.
On a pu ce rattraper avec le comté 3 ans d'âge, un délice.
Tout est tourné sur l'histoire de la famille propriétaire du lieu, intéressant mais j'aurais un peu plus de détails sur l'histoire du fort.
Très bien en famille.
Attention à certains endroits, l'odeur de l'ammoniaque est vraiment prenante.
