Fluffy pancakes made to order are the specialty of La Collation, where gourmet brunches are held every day. Choose between classic recipes (scrambled eggs and pancetta, fromage frais and smoked trout) or ephemera. On the sweet side, pancakes are embellished with toppings and whipped cream. Hungry eaters may want to try the gigantic Tower Pancakes! Delicious and entirely homemade, with mostly local ingredients. You'll also find La Collation on rue Fondaudège.

Première et seule pancakerie bordelaise, La collation porte bien son nom. On y déguste des pancakes salés à la farine de sarrasin version sandwich (avec option végétarienne) et des montagnes pancakes sucrés avec ou sans gluten. Les ingrédients et garnitures sont locaux et majoritairement bio, les prix corrects. Le lieu est petit, réservation impérative le week-end pour le brunch !
