Want to discover the flavors of the South-West's gastronomic heritage? Since 1968, the team has been sourcing the finest local produce to concoct simple, traditional dishes reminiscent of those served by our grandmothers. Chef Franck Audu's seasonal dishes include razor clams with caviar, cassoulet Chalossais, lamprey à la bordelaise, macaroonade with porcini mushrooms, bacon and foie gras... The fries are homemade, cooked in duck fat. As for the desserts, they take us back to our childhood memories. An institution!
