LOÏC ASPA
Loïc Aspa, based in Bordeaux and Bassens, is not much talked about and yet he treats us to his specialities such as brioche or canelé, but he also makes a whole variety of cakes to fall down like Le Trois Chocolats. It is a mousse of three chocolates (ivory, milk, dark), nougatine chips, chocolate biscuit, chocolate crunchy balls. Some cakes and tarts stick to the seasons like Le Fraisier or Le Fruits rouges: raspberry mousse, creamy blackcurrant, madeleine biscuit. The fruits that fill them all come from French producers. The pastry shop also offers other sweet and savoury treats: macaroons, pastries, quiches or pizzas
