He is a true cheese maker, because he knows all the stages of production and distribution of each cheese he sells. He is also a specialist in raw milk cheeses. Moreover, he counts among his loyal customers great chefs from Bordeaux and Gironde. We also find him in Libourne where he created his first cheese dairy before setting up in Bordeaux in the Chartrons district
