Poligny is famous for its Bleu de Gex Haut-Jura. This blue-veined cheese comes in the form of a wheel 31 to 35 cm in diameter and weighs between 6 and 9 kg. Its rind is whitish, even yellowish, and stamped with the word GEX. Its paste is white to ivory, marbled with well-distributed pale blue-green molds. The taste of Bleu de Gex is balanced in salt, slightly bitter, with lactic and mushroom notes. For cheese lovers, it's worth trying the old Bleu de Gex, called Perrachu or Perassu in local dialect, which is more mature and has more intense flavors. Bleu de Gex Haut-Jura benefits from an Appellation d'Origine Protégée (AOP), guaranteeing that all stages of production take place within the Appellation's delimited geographical area.
