HOSTELLERIE DES REMPARTS
The Hostellerie des Remparts promises you a "farandole of flavours in a historical setting". In fact, we will enjoy lunch in the summer of La Bat, a small stream flowing along the Maison des Remparts. On the kitchen side, the chef, Enrico Caruso, is well placed for his cellar, with some references. Even if it seems to be obvious, the map changes according to the seasons. It is difficult, therefore, to put a dish forward through this inventive and generous kitchen. The chef always emphasizes a spice or a product (liquorice, crayfish, sauce) to surprise his customers.
