The chef imagines a personal and elegant Normandy in menus starting at €48: M. Blot's snails, garden squash and nasturtium, sea bass and Graham's sage emulsion, M. Limare's lamb and nettles, Normandy-bred beef and hay-infused jus, M. Crevel's dessert of apples, rosemary and trumpets. Good service.
