At the bottom of a paved courtyard, the great chef installed his workshop in an old Renault garage. He gave his last madness to Nicolas Berger, who was his pastry chef for years. He now spends all his time directing the chocolate makers that we see working through large windows. Vintage machines have been found throughout Europe and in operating conditions. The industrial loft decoration highlights a huge wooden and iron table that belonged to the Banque de France. Now, finish the fine cuts, they are used to present the nuggets of the house: 25 types of pralines and ganaches, 43 cocoa beans from 12 different countries, but also delicious tablets.
