Canteen in Paris preparing dishes always mixed at lunchtime and tasting menus in the evening.
Dersou? Is it a foreign dish? Not at all answered the two owners Amaury Guyot, chief barman mixologist, (ex Sherry Butt and Prescription Cocktail Club) and the Japanese leader Taku Sekine (former Ducasse in Tokyo, Saturn and Clown Bar). It is a tribute to Kurozawa's film Dersou Ouzala, which tells the unfailing friendship between a Russian explorer and an old Mongolian hunter in the heart of the hostile landscapes of Siberian taiga. Our two lascoaches therefore want explorers and hunters of flavors and the map is there to prove it. In the evening, the three tasting menus do not give food and wine but 5, 6 or 7 dishes with 5, 6 or 7 cocktails in total free style. Noon is the canteen, much more affordable with always mixed dishes: beet, feta and origan on entry; fried chicken, sweet chili, roasted potatoes, Thai basil, and apple pie pie and Thai ice. L’endroit est très bruyant. Du béton brut dans une salle totalement ouvert, y compris la cuisine. Et il n’y avait qu’une vingtaine de clients. On entend soudainement le bruit de machine puis le rangement de la cuisine.
Nous avions faim en sortant même en demandant souvent du pain. Le comble a été le plat de viande: ~8 pasta style fusilli et ~25 grammes de confit de canard ! On avait pourtant demandé si les portions du menu 4 plats étaient satisfaisantes pour un dîner.
Je rajouterai peu de bouteilles à moins de 60€ et une connaissance approximative des vins (ne se souvient pas du cépage…). 14€ le verre de vin orange…
The ambiance is very chill and the service relaxed as well. The only thing I would stay is that they need to improve their bar stool situation as it was quite uncomfortable. The cocktail pairing was amazing!
