Basque hotel-restaurant with flowered balconies preparing homemade Béarn or Basque dishes
On the pediment of the Auberge Etchegorry ("red house"), a curious inscription: Cabaret de madame Grégoire. And just below it: Basque restaurant. Dominique Laborde, the owner, is inexhaustible about the history of her establishment, which has been run by her family since it opened in 1962. The address is typical, as is the cuisine. Here, dishes have a Béarn or Basque accent. Everything is homemade, even the black pudding. The restaurant is housed in the Hôtel du Vert Galant, with its flower-filled balconies. A charming setting in a quiet district of Paris.
