The brainchild of the Valette family, livestock farmers in Aubrac and already restaurateurs in Paris, this Aveyron-style meat bar has a serious "terroir" stamp of approval. The establishment serves beef steaks, burgers, brochettes and ribs, all raised on the Vialars farm near Laguiole. For pork, Aubrac Corner relies on Conquet, and accompanies all its dishes not with fries, but with salad, pommes grenailles en persillade or... aligot, of course! Backed by quality products, the chain has also set up shop in the2nd arrondissement and La Défense.
