Since the beginning of the 20th century, this Montparnasse institution has seen its share of personalities from the world of politics and arts and letters, as well as a good part of the American literary colony. Today, the Dome is frequented mainly for its impeccably fresh seafood and fish. Its products are admirably cooked. A fine selection of oysters, bouillabaisse marseillaise served for two, filet of St. Pierre or roasted turbot... So many calls from the sea that it is difficult to resist.

Quant à la cuisine, c'est celle d'un chef japonais amoureux des produits de la mer et qui sait habillement mêler tradition culinaire française, japonaise et orientale.
Le menu Ernest en donne un bon exemple avec ce qui est pour nous la meilleure soupe de poissons parisienne, aillée et relevée idéalement. La lotte tandoori est aussi une belle découverte, les épices justement dosées subliment ce poisson fin.
Et comment ne pas terminer sur l'un des meilleurs mille-feuilles parisien et en tout cas le plus spectaculaire. Aérien et vanillé à souhait.
