Ghislaine Arabian is known for having been a chef in the kitchens of Ledoyen, the famous two-starred Parisian institution from 1992 to 1998. She became familiar to the general public for her participation in the jury of Top Chef show on M6 from 2010 to 2014. You can find her in this small bistro with an ordinary facade offering a very simple menu: seven starters, ten main courses, and seven desserts. As you watch the female chef working in the kitchen, you will immediately want to taste all the dishes. The menu features bistro dishes made with fresh ingredients, including a farm-poached egg with chanterelles, a cod fillet of St. Jules marinière, kale cabbage in marinade, or roast Limousin lamb shoulder with rosemary, fried beans in butter. For dessert, there is a mirabelle pie or pan-fried greengage with verbena lemongrass, and sorbet with smoked chocolate. The menu changes daily but you can regularly find sausages from Troyes Lemelle, steak tartare, Black Angus beef undercut, or veal kidneys cooked according to the chef's inspiration.
