Don't miss the Capucins quarry, part of the "gruyère" of Paris's subsoil, which has been classified as a historic monument! Located beneath the Cochin hospital, it's one of many stone quarries in the capital. From Roman times, when Paris was still Lutetia, to 1813 and the definitive ban on underground quarrying, this quarry played a major role in the city's construction. Managed since 1973 by the SEADACC association, it can be visited by contacting them.
