On the pleasant Place du Général-Beuret, Wallace has a sunny terrace and it is surely what will attract passers-by at first sight on sunny days. However, the interior is equally pleasant with a fancy decoration designed by an interior decorator. On the menu, bistro dishes, the bias of a short menu and the promise of homemade and seasonal products. We begin with a ceviche of sea bream avocado, rougail sauce, mango and piquillos and a cold fine ratatouille with basil served with fillets of sardines confit with balsamic vinegar. We continue with a salmon steak lacquered and cooked à la plancha accompanied by crispy Chinese cabbage, vegetables are cooked precisely, subtly and precisely seasoned, the salmon is perfect. We also taste the lamb shoulder cooked for seven hours, juice with spices served with vegetables and potatoes. The lamb is melting and tasty, the juice is divine. The à la carte salads are generous and gourmet. What about the financier with apricots poached in rosemary served warm with a separate apricot sorbet, which will certainly make us return. A crush for this bistro with an undeniable quality/price ratio. We also succumbed to the brunch served at the table, the chef adapts to all needs and the service is always charming.
